Parmesan and oat crumbed chicken

Last night we spoke to our vet friend (a friend who happens to be a vet, not a vet who I stalk) at bath time about the fact that Ray had eaten eight balloons (if you find yourself in the same boat: don’t worry too much unless they were modelling balloons or the dog looks more pissed off than usual) (I paraphrase).

By now Bert was in the bath. He spent the entire time I was speaking to her mouthing ‘let me talk! I dry my hands!’ When he was finally handed the phone he chatted at length, naked, about the eight unblown balloons, the light blue blown balloon that is now hidden and the one red balloon that wasn’t ‘eated’. Anna suggested she come over soon to see his new bedroom and he said casually, ‘that would be cool.’

Just now he called me into his bedroom over a toileting crisis and descended the bunk bed ladder jauntily, looking over his shoulder and smiling like a tiny Bruce Forsyth. He told me ‘you smell nice’ and trotted off to the bathroom.

He requested chicken, chips and broccoli for dinner. No one refuses a charmer. This is the chicken we ate.

Serves 1.5

1 chicken breast

1 tablespoon plain yoghurt

2 tablespoons rolled oats

1 tablespoon grated Parmesan

Bash the chicken with a rolling pin till it’s about a centimetre thick. Resident four-year-olds might help, but watch the arc of their swing. Together, put the chicken in a bowl with the yoghurt, stir to coat and chill it in the fridge for at least half an hour. This stage makes it tender and gives the coating something to cling to without the faff of flouring and milk dipping.

Pre-heat the oven to 180.

Put the oats in a ziplock bag and bash them with the rolling pin till broken up a bit. Put in a bowl with the Parmesan and stir quickly to mix. Take the chicken breast out of the yoghurt and dip in the oats, turning over till fully coated. Pop on a lined baking tray and into the oven for 20 minutes.

Yes, we ate it in front of the TV.

Pork and apple meatballs

Everyone’s got their thing. I was cripplingly shy as a small child, learned to cover it up with bravado and denial (and cider) as a teenager and much, much later in life got brave enough to look it in the face and admit that the anxiety was part of me, not something that the world was doing to me. I conquered it, more or less, by facing it, full-beam.

When Bert was smaller I fretted that he was shy. But not to worry – he’s a massive showman. The sort of bloke that can be convinced to go on a dog walk with the suggestion that ‘everyone will look at you in your Olaf [from Frozen] costume and be shocked’.

It’s rather liberating to realise how little hold genes can have on our offsprings’ demons. But there’s no escaping demons, we just don’t know what Bert’s is yet.

I do wonder, though, how much harder we make it for our children to face their own flaws and accept them when we reward them so much for being perfect – getting the answers right, being good, doing what we expect of them or what’s convenient for us. Bert cheerfully informed his teacher last week that he’s ‘Mr Perfect’ (so, so shy!) And I don’t have a neat conclusion to this train of thought other than hoping that I can help him realise that he’s utterly imperfect but perfectly lovable.

Mr Perfect would eat ‘soupy’ meatballs, but Bert needs the soupiness blotted off on a kitchen towel first, and I’m the sort of indulgent mother who does just that.

Serves 3-4

500g minced pork

1 apple, grated

2 tablespoons breadcrumbs

Salt and pepper to taste

Splash of olive oil

1 carrot, grated

1 yellow pepper, finely chopped or grated (sounds unlikely but is possible!)

1 tin chopped tomatoes

1 teaspoon brown sugar

1 teaspoon balsamic vinegar

Salt and pepper to taste

Mix the pork mince, apple, breadcrumbs and seasoning. Heat a glug of oil in a large frying pan, form the pork mixture into small balls (I use latex gloves, but hopefully you’re not here to judge). Brown, shaking the pan now and then to move them around.

Move the meatballs to the side of the pan, add a bit more oil if you need it, and gently fry the carrot and pepper till it’s starting to get softer and paler – you want it to almost be dissolving into the oil. Then add the tomatoes, sugar and vinegar, season, and get your pasta on to boil, adding half a ladleful or so of the cooking water to loosen the tomato sauce when the pasta’s been cooking for about five minutes. By the time the pasta’s ready, so is the sauce.

Serve with grated Parmesan or Pecorino cheese.

Chicken and mushroom biriyani (or mushroom biriyani)

Bert’s hitting the party scene hard. Somewhere between the age of three and four, children stop existing like well-loved dogs – food ideally being stolen and lapped off the floor, the top of a new speaker being as good a place to poo as anywhere, reality being here right now with no sense of past or future, emotions being either damp, panting joy or aimless whining – and suddenly gain a sense of time. Four is bigger than three. Fourth birthdays are a Big Deal. I’m not sure there’s anyone we know, or indeed have just passed in the street, who hasn’t had the news of Bert’s age reinforced with four fingers held up forcibly and the number repeated twice.

Anyway, fourth birthdays being a Big Deal, we’ve been to a lot of parties recently and I’ve become a hoarder of ‘low maintenance good party ideas’. The one we went to on Saturday involved ride-on, very fast racing cars, a huge bouncy castle, between-meals timing (biscuits, crisps and squash on offer) and me frantically scribbling down supplier numbers for future reference. Now Bert’s fully immersed in party season I’m meeting a lot of mums and I’ve discovered that the phrase ‘do you watch Motherland?’ is code for ‘may I speak freely?’

I love Motherland and I love bacon Frazzles and I love Iced Rings (or hard doughnuts as Bert has it). But for more motherly days, this passes the ‘no sauce’ test, so long as I don’t even begin to suggest that Bert might eat a marinated mushroom – I put those in first, in a clearly separate layer, and don’t offer them to FOUR-YEAR-OLDS.

Serves 4 (or a greedy 2.5 with leftovers)

1/2 punnet mushrooms, sliced (or a whole punnet, no chicken, for vege nights or vege lives)

2 boneless, skinless chicken breasts or 4 boneless, skinless chicken thighs (my preference), cut into 2cm pieces

1.5 teaspoons mild curry powder

1.5 teaspoons garam masala

2 garlic cloves, crushed

120g plain yoghurt

2 onions, sliced

1-2 splashes of vegetable oil

Cinnamon stick

3 cloves

2 bay leaves

1 teaspoon turmeric

350g basmati rice

450g boiling water

1/2 tin coconut milk (we tend to cook this in the same week as chicken satay, which uses the other half)

Chopped coriander

Toasted flaked almonds

Pre-heat the oven to 180/ 170 fan.

Mix the mushrooms with the yoghurt, curry powder, garlic and garam masala, season and set aside.

Fry the onion in half of the oil till translucent, then tip into a large saucepan or casserole dish that has a lid. Pile the mushrooms on top and then the chicken.

Reheat the pan you fried the onion in and add a little more oil if necessary. Fry the cinnamon, cloves, turmeric and bay leaves for a minute or so, then stir through the rice, coating in oil. Add the boiling water, bring to simmering point and cook for five minutes. Take off the heat, stir in the coconut milk, season and then add to the sauce pan, covering the chicken with the rice. Cover with a lid and put in the oven for 45 minutes, till all the liquid is absorbed and the rice is cooked. Serve, only going as far as the chicken layer for FOUR-YEAR-OLDS. Scatter adult portions with chopped coriander and toasted almonds.

Sausage casserole

Bert, determined sauce avoider, came home from pre-school raving about the ‘brown, bumpy sauce’ he’d had there. Questioning and detective work revealed it to be sausage casserole. Desperate for some sauce in our lives, I quizzed him intensely, thought hard about what makes the best sausage casserole (and what makes sauce brown and bumpy), did some research and tinkering and came up with this.

Meanwhile, Bert’s been perfecting his joke delivery technique.

‘What do you get if… [stage whisper] what is it? you put what is it??? boiling water down what is it??? rabbit hole?’

I don’t know, what do you get?

‘What is it??? Hot what is it??? bunny. Hot hot hot hot hot hot…hot hot hot… hot hot what is it??? hot hot hot… hot bunny hot hot hot what is it??? cross bun bunny.’

Stewart Lee has made a career out of this. But all we have is an uneaten portion of sausage casserole.

‘What is it?  It is not brown bumpy sauce. It is not brown. What is it?’

He had pasta and Parmesan cheese, we had this.

Serves 4

Good glug of olive oil

1 onion, chopped

2 sticks celery, finely chopped

2 cloves garlic, crushed

1 carrot, grated

2 tablespoons tomato puree

1 tablespoon Worcester sauce

1 pack chipolata sausages, cut into bite sized pieces

1 tin tomatoes

300ml chicken stock

1 dessert spoon dark brown sugar

1 red pepper, roughly chopped

1 teaspoon dried rosemary or finely chopped fresh rosemary

salt and pepper

Heat the oil in a large saucepan and soften the onions. Add the carrot, celery and garlic and cook gently till the carrot is soft and pale orange. Add the sausages and cook till browned. Then add everything else, bring to a fast simmer, reduce the temperature and cook for 30 minutes, stirring now and then.

Serve with pasta, buttery mash or crusty bread.

Not Heinz spaghetti

Me to Bert in the bath last night: Was I being grumpy today or were you being naughty?

Bert (with an air of diplomacy): A bit of both.

Me: I wonder why?

Bert (accusingly): You were being bossy.

Me: That’s my job as your mum.

Bert: [doubtful look]

Me: And you?

Bert (carelessly): I was just doing my own thing.

As part of my ongoing, inadvertant project to pointlessly recreate processed food classics, tonight I accidentally threw together home-made tinned Heinz spaghetti – in a good way. We had ours with meatballs (my intention was to veg-up a tomato sauce for meatballs) and grated parmesan. This makes enough for a big bowl spare in the fridge – as a veg-heavy pizza base topping or to start your own canned spaghetti business.

Or just do your own thing.

Makes absolutely loads

Glug of olive oil

2 sticks celery, finely chopped

1 red pepper, deseeded and roughly chopped

2 cloves of garlic, crushed

A dozen or so fresh cherry tomatoes

1/2 tin sweetcorn

2 tins chopped tomatoes

Pinch of salt

Spahetti, to appetite

Add the olive oil to a saucepan on a medium heat, cook the celery and pepper till softened, add the garlic and cook for a minute, then add the sweetcorn, fresh tomatoes, tinned tomatoes and seasoning. Bring to a simmer.

Put the spaghetti on to cook.

Stir the sauce now and then. When the spaghetti’s almost done, puree the sauce and add a dash of cooking water from the pasta. Drain the spaghetti and stir it into enough sauce to coat it, stowing the rest away for another occasion.

Slurp.

Chocolate birthday cake

When I asked Bert what birthday cake he wanted, he said a Paw Patrol Lookout Tower. (For those who don’t spend 2 hours 20 minutes a day watching, it’s a tower on a tripod base, with a glass-sided look-out room, topped by a periscope, with a helter-skelter slide.) Thanks for the confidence vote, Bert, but your ambitions are not matched by my skills. So I made a cake in the shape of a bowl of dog food. Luckily my skills were not enough to make it look disturbingly (to his friends’ parents) realistic.

This isn’t my recipe but I did find an excellent one for a decent-tasting cake that’s also easy to shape (without crumbling) and ice with fondant icing. I’m recording it here for future years – one day, this will be the basis of a vast, chocolate flavoured Millenium Falcon and my life will truly have been worth living.

Makes a 20cm cake

Cake:

200g self-raising flour

40g cocoa powder (not drinking chocolate)

230g caster sugar

4 large eggs

230g soft, unsalted butter

¼ tsp vanilla extract

100g milk chocolate, grated (choose something from the baking aisle in the supermarket as it will cope well with the heat in the oven without going grainy)

2 tsp milk

Icing:

400g chocolate buttercream icing

500g ready to roll fondant icing (but only for a child’s, themed birthday cake – the stuff is truly disgusting)

Pre-heat the oven to 160/ 140 fan.

Mix all the cake ingredients till well-combined, then spoon into two lined and greased 20cm cake tins. Cook for 30 minutes in the centre of the oven. Check with a skewer – if it comes out of the middle clean then they’re done. If not, put them in for another 5 minutes.

Cool for 10 minutes in the tin then 10 minutes on a wire tray, then put in the fridge for a couple of hours if you’re going to shape and fondant-ice them.

Sandwich the cakes with buttercream (shape the top one into a dog bowl with tapered edges and a circular hollow in the top if you wish) and then cover with more buttercream. Roll out the icing to about 2-3mm thick (using icing sugar or cornflour to stop it sticking) and drape over the cake. If you’re going full Paw Patrol, fill the top with Maltesers and decorate with sugar dog bones and paw prints. (I stuck each Malteser down with a dab of buttercream, but by then I’d moved into The Zone – I also cut sandwiches into bone shapes and made bone-shaped cheese biscuits.)

Recall that blue food dye appears to be like a hallucinagenic drug to small children (the first time Bert ate something this colour he started to see monkeys everywhere), slice, feed small children multiple packets of Haribo and send them home with a plastic whistle. Job done!

 

Apple loaf

To me there are only two types of cake – a treat that should be as delicious as possible with no nod at all to nutrition, and something tasty but vaguely healthy that I can justify serving as a pudding or snack for a 3-year-old and his friends. (You can only really get away with loading other people’s children up with empty sugar at birthday parties I feel.)

In two days’ time we’ll be eating sundaes and drinking milkshakes as Bert turns four (‘that’s very old’, in case you were asking) and in four days’ time I’ll be loading other people’s children up with empty sugar and cutting up a treaty cake with four candles on it. In theory the cake will be Paw Patrol themed – does looking like a dog’s dinner count?

But tomorrow morning it’s apple loaf, a couple of friends and a big pile of Duplo for us. This is a (very slightly adapted) one from the National Trust Family Cookbook.

Makes 1 small loaf

140ml sunflower oil

2 eggs

150g golden caster sugar

3 eating apples, peeled and grated

170g wholewheat self-raising flour

1 teaspoon bicarbonate of soda

1 teaspoon ground cinnamon

Pre-heat the oven to 180/ 170 fan. Beat together the sugar, eggs and oil till the mixture’s light and fluffy – about five minutes. Then add the grated apple, and finally the dry ingredients. Make sure to sprinkle the bicarb through evenly, since a mouthful that contains a pocket of it is unpleasantly reminiscent of the sachets you stir into water when you’ve got a bladder infection, and no-one remembers cystitis fondly.

Tip the mix into a small, lined loaf tin and bake for about 45 minutes, till firm and coming away from the edges of the tin.

Chicken satay

(Dunno, I think there’s satay on the lens.)

Bert went to a friend’s for tea dressed as Spider-Man, made a paper crown and danced in it in the kitchen for ten minutes when we got in. He kept it in sight of the bath then went to bed in just the crown and a pair of pants. (We have much in common.)

I said, ‘look at you, a handsome prince.’

‘No, I the Queen! Call me the Queen. I am the Queen. Goodnight.’ And I was regally dismissed.

He woke up in the crown and came excitedly to our bedroom to show his dad. His dad, who’d been primed, said ‘who are you? The Queen?’

Bert threw him a look of ice-cold incomprehension. ‘No,’ he said, narrowing his eyes as if it was the oddest thing he’d ever heard.

I can’t take credit for any element of this recipe (another one from the National Trust Family Cookbook) but we eat it all the time.

Serves 3-4

Chicken (breast or thigh) in 2cm cubes – we had four thighs and two breasts, but we’re greedy

2 crushed cloves of garlic

Small piece of ginger, grated

2 tablespoons soy sauce

1/2 tin coconut milk

150g unsweetened crunchy peanut (or other nut) butter

1 teaspoon chilli flakes

2 more tablespoons soy sauce

Juice of half a lime (or a tablespoon of bottled lime juice)

Mix together the garlic, ginger, first lot of soy and chicken and marinate for at least a couple of hours.

Put the coconut milk, nut butter, chilli and the rest of the soy into a small sauce pan and heat till combined, stirring a little till smooth. Add the lime juice and season. Leave to cool.

Spread the chicken out on a grill pan and cook under a very hot grill for about 10 minutes.

Serve with cucumber and pepper batons and boiled rice (perfect rice tip – add the uncooked rice to a pan of lots of already boiling water and cook for 11-12 minutes. Drain and run a kettle of boiling water over it in the colander. Return the rice to the hot pan as soon as it stops dripping and put a tight lid on it. Keep it there, steaming, for at least 20 minutes). The boys had flat bread too.

Raspberry and yoghurt muffins

Some cakes shouldn’t pretend to be useful. This isn’t one of them. Bert pressed two to his face and digested them like a fly, innocent to the fact they contain spelt flour, yoghurt, almonds and not a huge amount of sugar.

Makes 6 muffins

90g plain flour

30g spelt (or plain brown) flour

70g sunflower oil

1 egg

1/4 teaspoon bicarbonate of soda

3/4 teaspoon baking powder

80g golden caster sugar

100g frozen or fresh raspberries

2 tablespoons plain yoghurt

Flaked almonds to scatter on top

Pre hear the oven to 190/ 180 fan.

Beat all the ingredients except the raspberries and almonds together. Fold through the raspberries then spoon the mixture into a case-lined muffin tin. Scatter each muffin with almonds then bake for 20-25 minutes, till firm to the touch.

The oil gives them a more delicate crumb than butter, and they’re not too sweet. I think frozen raspberries are less prone to sinking, but both work.

Peanut butter and jam mini-brownies

… in 20 minutes.

Today Bert passed his stage 1 gymnastics badge. It involved ‘hopping on one leg and other very hard things.’

He also sulked for an hour when I chose flapjack over chocolate cake at play group (hey, he’d had his Rich Tea!)

This was commiseration and celebration.

Makes 5-6

50g crunchy, unsweetened peanut butter

75g butter

1 egg

25g cocoa powder

50g plain flour

100g golden caster sugar

5-6 teaspoons jam

Preheat the oven to 180/ 160 fan.

Melt the butter and peanut butter.

Mix the other ingredients, except the jam, in a small bowl then stir in the peanut butter and butter mixture.

Grease 6 holes of a cupcake tray and spoon in the mixture to just under the top of each. Better to have 5 good portions than 6 stingy! Make a little hole in the top of each with a teaspoon and add a teaspoon of jam to each.

Bake for 15 minutes.

Eat two each.
